This place is legendary! Thick Tonkotsu Ramen is their signature. Mori Higashida opened Gumshara in the ‘Eating world’ food court (Chinatown) in 2009. Mori learned to make Ramen at Muteppou noodle restaurant in Kyoto. Gumshara’s motto on Ramen is very simple; No MSG, no Thickener, just water and over 200kgs of fresh pork bones boiled for 14 hours! They say that the richness of the soup comes from the marrow of the bone and the soft bone. It contains a lot of collagens, which is essential to maintain smooth skin.
