Gogyo was opened in January 2018. Founded by Shigemi Kawahara, the internationally renowned “Ramen King” of Ippudo fame, in 2003. They specialise in Kogasho style Ramen, which involves a charring technique to bring out extremely fragrant and bittersweet results that can only be tasted in our establishments. Classic ramen as well as a vegetarian option are also available to cater to different preferences. The process of making this ramen involves heating lard in a wok to an extremely high heat, then adding miso paste or a special soy base (there are two styles). When the fluid comes into contact with the super-hot lard it goes up in flames. The chef lets it burn for a few seconds, then chicken broth is added, which extinguishes the smoke and fire. It’s topped with chashu, bean spruots and a flavoured egg. GOGYO Surry Hills also offers a wide selection of contemporary a la carte dishes designed to lead up to or complement the specialty ramen selection. Items from the a la carte kitchen range from shared snacks to sashimi dishes as well as robata grilled mains.
