IIKO opened in November 2019 - right before the pandemic hooray for good timing!
They specialise in Mazesoba (also known as Abura Soba) which is a brothless version of Ramen. It is a relatively new style of ramen that features a soy based umami sauce, thick & chewy wheat noodles and lots of delicious toppings such as pork belly chashu, onsen egg and shredded nori.
Michelle is the owner and chef at IIKO and trained in Osaka with a Ramen Sensei.
Her sensei stays in touch to help refine recipes and stay consistent. Michelle often visits her sensei to fine tune her skills and to learn new recipes.
